There are other options besides KJV and NIV (and NRSV).  The new English Standard Version reads very well, as I think some of you have pointed out already in other threads.

One of the advantages for the NRSV for Bible lit classes is that there is a study Bible version available with notes by the Society for Biblical Literature.
